El Sazón de Las Guardianas: A Culinary Journey with Flavor and Commitment

At La Paza gastronomic project has been delighting local palates with its exquisite culinary offerings. El Sazón de Las Guardianas is more than just a food service, it is a story of perseverance, passion and commitment to quality.

The project was born about eight months ago, when three courageous women, Ana Martina Méndez, Graciela Olachea y Erika Vanessa Méndezdecided to take the path of gastronomic entrepreneurship.

They tried to start with a fixed stand, but faced obstacles with permits and could not find a suitable place to establish themselves, says Erika Vanessa, who is the coordinator of this project. The Guardians of the Conchalito.

"When we first started the project, we bought one of those stalls that are placed in the street, but we had complications with the permits because we could not find a place. We had found one, but they told us that we couldn't do it there," he says.

Undeterred, Las Guardianas found creative solutions. They opted to sell their delicacies through digital platforms like Facebook y WhatsAppin addition to offering their services for local events. Versatility became their hallmark, adapting to the circumstances and taking their cuisine wherever the demand called them.

"We prepare every week, every Friday we do it," shares Erika, referring to the dedication with which they approach their culinary art. Fridays become the magical day when they bring to life their specialty: breaded fish, although they also offer a varied menu that satisfies the most demanding tastes.

With events on the horizon, Las Guardianas have left their mark in places like El Coromuel, where their culinary art has won over diners.

"We've had to prepare there twice. It's a beach on the side of the Pichilingue highway," he explains.

The passion and dedication for this project has had the support of NOS Sustainable Northwestnot only by supporting Las Guardianas with the financial cost, but also in the process of strengthening and generating capacities to start this venture.

"He supported us with the money to get started, to buy things and everything we needed," Erika says.

But Las Guardianas are not satisfied; they dream big and aspire to expand their business model to a buffet service for events, in addition to acquiring more work tools, such as a hot dog cart.

Erika Vanessa clarifies that, although this project is headed by her, Ana Martina and Graciela, when necessary they rely on the support of the rest of the team. The Guardians of the ConchalitoThe group is made up of 12 women in total who are very supportive.

The menu of Las Guardianas

The gastronomic service that El Sazón de Las Guardianas offers to the people of La Paz is very varied, but the dishes that stand out are typical of the region. Thus, among the dishes they prepare are breaded fish, shrimp and fish tacos, golden tacos and grilled meat tacos.

Typical foods such as pozole, birria, tostadas, sopes, tamales, burritos and empanadas are also on the menu, as well as tortas and hamburgers. When the December holidays arrive, the variety includes menudo, wood-fired pork loin with plum marinade. Desserts and drinks are also available.

Based on the Estero del Conchalito, El Sazón de Las Guardianas not only offers culinary delights, but is also an inspiring example of how passion, resilience and collaboration can turn a vague dream into a successful gastronomic project. In every bite of their creations, you can find the effort and dedication of these women who are making their mark on the local culinary scene.
